Who Wants Husenpfeffer??

Rabbit Stew!!!!
  Can you believe its Spring already, I loved Springtime in the Rockies when we lived in Colorado.We would go on jeep ride up in the mountians ,looking at all the beautiful wildflowers and the snow melting bringing water to  all the green hills . I drove last week across the desert to Az and the desert is in full bloom ! California all the beautiful Poppies and Ice Plants are in full Color , just breath taking .  Take your family for a ride to look at the beauty that is before your eyes!

Easter came early this year  and I am not ready but I will be...Hams are on sale everywhere so are Rib roast in the bag. Now is the time to pick it up for some great BBQs  They will cut your meat for free at most of the big stores  $ 5.99 a pound some places cheaper . I always have a Ham in the freezer.I keep telling your ladies and gents  get ahead of the game so you don't have to run to the store when company stops by  !!!  You'll have more time with your family and friends.

I have spent the last couple of months driving back and forth from Az to Calif , and I CAN"T  believe how many people , NOT just KIDS -- PARENTS  Texting and driving. You can't take your eyes off the road for a second because they sure aren't looking where they are driving half the time. They are LOOKING at their PHONES. my God were a bunch of IDIOTS, your driving your kids and other peoples children  to school , sports events.,Where ever . We ask our Kids and  Grand kids not to do it , aren't we suppose to Lead by Example!!!  Nothing really is that important,and everyone has a blue tooth thing or the phone connects to the radio . My husband went to a safety class with our granddaughter and it was so Graphic , he came home and said all parents and kids should HAVE  to see it. , but the bad part was he was so upset he said he hadn't seen real death like that since Viet Nam . Please STOP!!!!!  nothing is That important than the precious cargo in the car  Including You

My mom made Easter Bread  YUM  I sure miss it!!

Blue Berry Coffee Cake

2  1/3 cups flour
3/4 cup butter ( 1 1/2 sticks)
1 cup coconut
1/2 cup packed brown sugar
1 tea cinnamon
2  1/2  tea baking powder
1 cup sugar
2 large eggs
1 cup milk
1  12oz package frozen blueberries or 2 1/2 cups fresh

Combine 1/3 cup flour   1/4 cup butter  coconut   brown sugar  and cinnamon  mix till crumbly and moist   set aside

mix remaining ingret   except blueberries ,  add eggs one at a time   Fold in blueberries  pour into a greased and floured 13x9x2  pan  sprinkle with topping    bake 375  for 40 minutes  test in center like banana bread  when it come out clean  and golden brown   cool slightly  serve warm or room temp

HELLO I am Still Here!!

I haven't wrote on my Blog  for quite a while! But I am still trying to share a lot of just common sense ADVICE  from the school of hard knocks!!  It seems everyone learns everything from GOOGLE  not GRANNY !! But  I still want to share my two cents worth .
 I was watching  to a Lou Holtz video - and wanted to share something he said that really made me think!

Of course his sixth  want to be Happy was about Collage and Football  but mine is--

If you want to be Happy for the rest of your LIFE---Do on to OTHERS as You would want done for YOU!!!
I am sure each and everyone of us was taught this at some point in our life,s .

Lets all start this new year by doing little random acts of KINDNESS everyday to one another-- Strangers, Friends, Family, whoever pulls at your heartstrings !!! This means be nice to one another, Stop fighting and Worrying over all the STUFF we can't do anything about anyway  that steals our JOY!!

Here are a few thing  That I have been doing -- Feed the Birds--Do a chore for a Family Member--Donate to the Food Bank--Donate a Book to the Children,s Hospital --Take Cookies to the Fire Station-- Tape coins to a Vending Machine at the VA -- Give a Compliment to someone standing in Line--Call a Old Friend-  Buy a bag of Suckers and Pass them out in a Parking Lot (I did little candy hearts at valentines in walmart parking lot )  The Gift of Kindness is a lot more than Money  its Giving of Oneself!!!

I could go on and on about being a blessing to Mankind, Lets go Back to the Basics of Life before the  ME ME ME,S !!

Being a Blessing to One Another is really the Greatest Happiness in the world, How do you Want to be remembered??  A GIVER or a TAKER !

I am moving back to California to be closer to my Family as this Ole Gray Mare wants to enjoy these Golden Years  " With Old Friends, Puppy Dogs, and Watermelon Wine"  I think thats a old country song!    Really I want to instill on my grandkids or who so ever wants to Listen to Grandma!! Lets get back to Family Values, eating dinners as families  Sunday Dinner with Grandma at the Table.  No Phone Zones. No I Pad I Phone Kindles , Headphones, whatever !! I have driven My grandkids to school and NOBODY TALKS  everyone is on Text Twitter, Facebook Music  HELLO  I am In the Car , or sitting at the table with my grandson,s and their friends . The kids aren't eating dinner they are watching a movie or playing a game that is connected to 3 other devices together!  HELLO how was your Day????  Were all at Fault Including MYSELF but times are Changing and we need to Draw Our Children and Grandchildren back in!!  Go Back to the Big ' 10 " starting today do something nice for someone  xoxoxox

This Recipe is my Sisters Autumn Soup  It make a lot 15 or more serving  Make Some and Take some to a Friend !!  A act of Kindness  xo

Autumn Soup

4 pds hamburger
4 cups onion chopped
16 cups water
4 cups carrots
4 cups celery
4 cups potato cubed
2 whole tomatoes chopped
1 46 oz tomato juice
1 small head of cabbage sliced
1 tab kitchen Bouquet
4 bay leaves
1/4 teas basil

In large skillet brown ground beef add onions and cook about 5 minutes .  Bring water to a boil  in large pot, add carrots ,celery, potatoes cabbage, tomatoes all spices, --ground beef and onions (DRAINED)
bring back to boil  and then simmer covered for 20 minutes  add tomato Juice return to boil then turn down and simmer for 2 hours  xo   add salt and pepper to taste

When Irish Eyes are Smiling !!!

I have always said its funny how everyone turns into a Irishman on the 17th of March!
If your a Corn Beef fan now is the time to stock up on a extra briskett or two! Why pay 7.99 a pound later when its under 3.00 now . they freeze great , then you can make Rubens later in the spring or summer. Strawberries are really cheap now too. Their  88 cents  in the big store but some of the fruit stands  are 2 for 1,00 . I slice them up and put in freezer bags , let the air out and they stack well . I sugar some and mash or dice them also for muffins and my strawberry bread . Taking a half hour or so doing some of this You will always have a dessert in the freezer  , even if its just a topping on ICE CREAM !!
I wonder if you know that St Patrick..The Patron Saint of Ireland, is credited with bringing Christianity to Ireland. While still respecting the country's ancient customs and traditions . He is also said to have driven all the Snakes out of Emerald Isle!
Today most St Patrick's day Celebration involves far less serious and scary endeavors, such as wearing green , drinking beer and waving Irish Flags! but you dont need the Luck of the Irish to serve up a cozy  Corn Beef Dinner. Its so easy  with a slow cooker , you will think a Leprechaun lent you a hand in the kitchen!!
Whatever you do have fun and be SAFE !!

Corn Beef and Cabbage Dinner

2 pounds small red potatoes                           1 cup apple juice
                                                                             1 1/2 cups water
1 1/2 cups fresh baby carrots
1 med                                                                     1 head of cabbage cut into  8 wedges
onion  , cut into 8 wedges
2 -2 1/2 pounds corned beef brisket with a seasoning packet

Place potatoes , carrots , and onion in a 5 Qt slow cooker,, top with the corn beef   sprinkle the packet on top . Add the apple juice and water enough to cover the brisket
cover and cook 8 to 10 hrs on low , if you wand you can cook in oven the same way on 300   about a hour before serving take all out and put on platter and cover to keep warm   add cabbage to the broth and bring to a boil until crisp tender    ( hint) I like to start all on high for about 40 minutes then turn to low.

Horse radish sauce
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons prepared horseradish ( more if want hotter)
2 teaspoons dijon mustard
mix altogether

Corn Beef Hash

2 tab  Butter
2 cups small diced potatoes
1 1/2 cups chopped or diced cooked corn beef
1/2 cup finely diced onion
2 tab snipped fresh parsley ( oppt)
1--2  teaspoons worcestershire sauce
2 table milk ( if too dry)

In large skillet melt butter  stri in potatoes, meat, onion. parsley worcestershire sauce  --salt and pepper  cook for about 8 minutes or until brown  stir in milk if needed   serve with Eggs YUM!!
( you can mix this up and heat it in the oven also )

Make Sure You Wear GREEN or if I see YOU , I will KISS YOU and maybe a little Pinch!!!

Will You Be MY Valentine !!

Remember its Not spending $50 on roses that is important, it giving YOURSELF ! I would rather watch a tear jerking lifetime chick flick with someone special and eat popcorn or play Skip Bo ( my Favorite ) that took the time to do something to make me smile xoxox .   Don't spend all that money on dinner ,or gifts that are gone in a flash.  Make memories  that will last a lifetime.  Bake Heart Cookies give them away to a  someone who doesn't bake or just make someones day. Maybe a old person ( Like ME YUM!! )  Take him or her out for a foo foo coffee and a muffin or a donut , and its a lot cheaper than candy and flowers. Truthfully it will make them Happier than you realize ( Please someone pass this information on to my husband)  Get up and watch the sunrise or the sunset, read a short story together, have a picnic in the back yard and remember when you fell in Love.  I remember when my husband bought me the "45" record of "This Boy" by the Beatles (of course I still have it because I am a hoarder) and I played it > He KISSED me and I fell in LOVE that night!! That was 52 years ago!   MAKE MEMORIES  that can't be taken away!!
 
This is a pretty salad and you could shape it in a heart  !   serves 2 lovebirds

Spinach Salad with Strawberries

3 cups of  torn fresh spinach
2 fresh mushrooms
1/2 sweet red pepper sliced
1 small carrot ,peeled and grated
1/2 small red onion sliced thin
1/4 cup crumbles blue cheese( optional)
4 strawberries sliced
2 tablespoons fresh parmesam cheese
1/2 cup croutons
2 tablespoons sliced almonds

Dressing

1/2 cup sugar
1 cup olive oil
1/2 cup white vinegar
1/3 cup ketchup
2 tablespoons worcestershire sauce

combine all ingredients, stir with whisk until blended

Yields   1-3/4  cup  ( saves great)

You could add a chicken breast  to the salad if you wanted

Tis the Season to .......

Christmas is just around the corner and a New Year ! We still have time to do wonderful things by the end of the year. I have been thinking of all the good and bad things that went on in my life this year, and I am going to dwell only on the good.  I found a great church, met some New friends ,connected with some Old friends, gained  35 LBS , YIKES  thats one of the BAD things!!!!

I have always done Toys 4 Tots ,Food Banks, Shelters, Adopt a family , which I am still doing. This year I am going to buy a bunch of Gift Cards  with my Grandkids, I want them to do some acts of kindness for strangers.

They have cards for subway, Denny,s, Little Ceasars Pizza ,Circle K  so many places.  Think about it Subways has a special sandwich all the time  this month a 6" meatball or coldcut is $2.00  a person could buy 4 sandwiches with a $10.00 card. Denny,s has the 2-4-6-8 dollar menu !  Circle K has Great Coffee, I am not a big fan of Starbucks  as I see so many WHO really can't afford to go there drinking $ 5.00 cups !

Who to give them to?? Really anyone, I see all kinds of of people who need to be blessed with a little kindness.How about the Lady who has to drag all her laundry to the laundry mat along with her kids as she doesn't have a washer, or the person who is pushing a baby cart with her or his grocery,s on top as they don't have a car.  They don't have to be a homeless person , you will know in your heart who to do it for.

Just remember there are a lot of hurting and lonely people out there, and the Holidays are the worst!
Jesus said " DO ON TO OTHERS " Little acts of kindness add up to one Big BLESSING!!

Now remember my post last March about saving a dollar a week. Well I was blessed to be able to do it and I have been able to save over$ 1100.00 so far and it will pay for All my Gifts and Good Deeds!! If you would have done just the Quarter you would have almost $300.00. I Hope some of you will do it next year, If you start it its sort of fun and get the kids to do it too  Think about .25cents  in week 40 thats only $10.00 that your saving!

I remember years ago ,we would get together with friends it was cookies,coffee. hot chocolate now its big tables filled with everything from Soup to Nuts as my Mom would've said. Gift exchanges were homemade cakes,cookies, candy maybe a homemade apron now its $$$$$  All I keep saying is " LETS GET BACK TO THE BASICS"

Cranberry Meatballs

make at least 1 day in advance

1# lean ground beef--3/4 cup breadcrumbs--1/2 cup tomato juice--2 tab horseradish--1 egg beaten 1 tab Worceshershire sauce--1 tab minced fresh parsley 1 tea salt 1/2 tea pepper
Mix all togather and make into  1 inch meatballs bake at 350 till brown  about 30 min.   drain on paper towels

Sauce !
1 tab cornstarch -- 1 tab water 1 can whole berry cranberry sauce --1/3 cup brown sugar  1 tab lemon juice   combine all in saucepan stirring until sugar is melted and it starts to thicken  put meatballs in 2 qt casserole pour sauce over and refrig for 8 hours     T o serve cover and bake for 30 minutes till heated thru  or put in crock pot serve warm   make approx 4 dozen meatballs!

Gobble Gobble !!!!

I cant believe how fast this year has gone by, my Mother use to say the same thing to me, but of course I thought she was crazy! I have been planning on writing each month and now the year is gone.  Just like back then my life was crazy working,raising a child, keeping up with the Jones, or just dealing with everyday life. When your young you don't think how time flies when your having fun.
Thanksgiving is a little over a week away and I have so much to be Thankful for, as I am sure we all do. Some of you will have big family dinners ,go out dinner,  work in a kitchen serving, or church.
I am going to ask you to be a blessing to someone! When your buying all your Thanksgiving  groceries, BUY someone else in line too!  You will know who to buy for, they are the young family or the older couple on a fixed income . They will have just the basic things in the cart, not all the fancy stuff that is  probably in your cart   , and be thankful  that you can do it.
Now your going to say HOW !
1  Don't go out and buy something new to wear on Thanksgiving, I am sure we all have something very nice in our closet
2 Pack your lunch for , forget the Starbucks each day, or where you buy your treats.. give it up this week going to work etc , make that choice I bet you save a good $25
3 Go a extra week on your nails, there is another $20 or so with tip  no one is loooking at them at the dinner table they are enjoying your tasty food and company. Have your kids paint your toenails  on top of that you get special family time .
All I am trying to say is DO a ACT of KINDNESS , it can be big or small but do it out of LOVE !!Just play it forward , we get so caught up in the fast lane we all forget.  We are so BLESSED!!



Brandied Cranberries
1 #  fresh cranberries       2oz brandy
1 cup sugar

mix together and put in baking dish, cover with foil   bake at 350 for about 40 minutes or until the cranberries and sugar in hot and bubbly   stir in brandy   serve warm or cold ( can use more brandy to taste )
with the left overs I make

Orange Iced Cranberry Cookies

3/4 cup sugar       1/2 cup brown sugar    1/2 butter softened   1/2 cup sour cream   1 teaspoon vanilla
2 eggs    2 1/4th  cups flour  1/2 teaspoon soda    1/2 teaspoon baking powder   1 cup cranberries
1 cup chopped nuts  

350  lightly greased pan   bake 11--13 minutes

combine sugars, butter, sour cream, eggs, and vanilla  blend well add flour/soda/and baking powder blend well   gently stir in cranberries and nuts     dont over mix   drop by teaspoons on pan !  bake till golden brown      cool    frost

Icing  2 cups powdered sugar    2 tablespoons butter melted    1 teaspoon grated orange peel    2--3 tablespoons orange juice          spread on cooled cookies




Sweet  Potato or Yam Casserole

40oz can or 2 large cans of yams or sweet potato     1/2 cup butter softened    2 eggs beaten   1 cup sugar      1/3 cup evaporated milk  1 tea vanilla
Drain and mash potato mix remaining ingrts   put in greased dish  and spread topping

Topping
1 cup brown sugar     1/3 cup butter    1/3 cup flour     1cup chopped pecans   mix together and sprinkle on top

bake   45 min    at 359    6--8 servings

Spring Break is in the air!

I am going to be babysitting during spring break. Is that Lucky me or Lucky parents who are going away, leaving me to entertain 5 grand kids for 10 days!!  I am going to try to make it a fun and memory making time. I hope the weather in San Diego is great-- Beach Time , Picnics , fishing , and few other fun times.
So lets get this Party Started. We were going to take the trailer and go camping but that didn't work out --So lets take the tent and put it up in the yard, we still can roast hot dogs and marshmallows on a stick.
Since we will be making memories were going to make Memory Frames. I am going to take lots of pictures.so we will have many to choose from. Everyone will have their own frame , buy them at the $$ store or wall mart for a couple of $ . Then all the thing we do can be glued on the frames Like tickets to a show, leafs, pine cone, seashells, a spoon from the ice cream store.All the treasures we find along our way such as maybe a HOOK that we found while fishing, anything we want on it. When were done each will have a picture of their favorite time . The memories will be Priceless and almost cost less!
Denny's has the 2 4 6 8 $  menu  Pancake puffs with ice cream $ 2.00-- O YEAH!!! but make sure you tell them NO DRINKS before you go as why pay another 10 dollars for a soda when you can take that 10 bucks and buy a 2 litter of root beer and ice cream and a sleeve of RED SOLO CUPS  and have floats another day!!
On the day were out doing thing it will be NO PHONE, Games , Etc  while were out enjoying our time fishing etc. Lets pretend were back in the 50, s and 60,s

Creamy Apple dip
2-- 8oz packages cream cheese softened
1 cup brown sugar
1/2 cup regular sugar
1 tub fat free carmel apple dip

Mix the cream cheese, sugars and beat till smooth add the carmel dip and whip all together

THIS makes a lot and I know it has a lot of SUGAR but they aren't going to eat the whole bowl at once! it save well in the fridg
I also slice the apples up and soak in salt water for about 5 minute , drain and store in zip lock in fridge

Mummy Hot dogs

12 hot dogs
2 sheets puff pastry
6 slices of american cheese

preheat oven 350 and line a pan with parchment or foil.
roll out a sheet of puff pastry on floured surface. using a knife or pizza cutter cut into 12 pieces do the same with the other piece of puff pastry   Cut each piece  of cheese in 1/2   using 2 stripes per hot dog  wrap the dough around  the hot dog and cheese like a MUMMY  leaving a little opening at where its face would be .
Bake for 10 to 15 minutes or golden brown  you can put two dots of mustard as eyes   serve with mustard and ketchup!!
